Healthier Ice Cream Sandwiches

Looking for something to satisfy your sweet tooth on a hot summer day that won't make you feel super guilty if you grab a second helping? Say no more. These "Ice Cream" sandwiches are the perfect summer treat for you and your family. I make these dessert sammy’s for the office, a cookout, or to stash in my freezer when I am craving sweets. These are easy to whip up and I guarantee these will be a fan favorite.

If you are feeling a little crazy, try adding a chocolate spread on one side of the cracker, or use cinnamon graham crackers to substitute the regular. The possibilities are endless!

Ingredients:

Directions:

Mash banana. Combine banana, yogurt, and peanut butter until smooth. Lay out graham crackers and top one side with the mixture. Top with the other side of the graham cracker. Line cookie sheet with wax paper. Arrange on cookie sheet and place in freezer for a few hours to overnight.

Recipe notes:

You can substitute almond butter for peanut butter. Also if you are feeling fun you can spread some Nutella on one side of the graham cracker for a little added flavor.
